Sometimes the best recipes aren't the ones you spend hours perfecting, but the ones that come to you through happy surprises and shared moments. At a recent community dinner hosted by my church, I stumbled upon a dessert that was as easy as it was impressive— a phyllo cake inspired by the Greek Patsavouropita, which coincidentally resembles the Crinkle Cake that went viral on TikTok in May 2023. This isn’t my original recipe; it was shared by a lovely lady at the dinner who saw how much everyone enjoyed it and passed it on to me.

Phyllo Cake
Makes a 35cm (L) x 23cm (W) dish
What you’ll need:
1 pkt Antonio’s phyllo pastry
1 cup caster sugar
6 eggs
2 tsp vanilla
250 gr unsalted butter, melted
1 tsp baking powder
1 tsp cinnamon
Icing sugar for dusting
What to do:
Preheat oven to 190 degrees Celsius
Grease a 35cmx23cm baking dish, one by one, scrunch each sheet of phyllo pastry and lay it in the tray. Do this for every sheet and stack against each other.
Pour over the melted butter and using a pastry brush ensure the pastry is coated.
Bake in the oven for 15 minutes.
While the pastry bakes, prepare the egg custard.
In a bowl combine the eggs, cinnamon, vanilla and baking powder - whisk well. Slowly add the sugar and whisk till incorporated.
Once the pastry come out of the oven, pour the egg mixture over the top and cook for a further 40 minutes or till golden brown.
Once cooked, remove from oven and dust with icing sugar.
Serve warm.
