Yiayia’s Chips & Eggs

My motto in cooking is ‘pick your battles’ and that’s exactly what I’m doing today. My Yiayia makes this delicious dish (which I feel like many cultures have a version of), we call it Chips & Eggs! Bless her, she sits there and peels potatoes and cuts them up into the perfect shapes. I decided to grab some frozen chips to make it that little bit easier. She even gave them the tick of approval after we made it. Here’s our recipe below; ⁠


This is my Yiayia Eleni, she lives in the apartment below me and is my best friend. Every recipe of hers tells a story, rich with tradition and filled with love. Having her so close means I get to enjoy her wisdom and warmth every day. Whether it's watching her expertly maneuver around the kitchen or listening to her stories from back home in Cyprus, these moments are priceless and deeply influence my cooking and content.

Growing up with such a strong culinary influence inspired me to share these flavors with the world. Yiayia Eleni's Chips & Eggs might seem simple, but it's the comfort and joy in every bite that makes this dish a staple at our family table. By using frozen chips in this recipe, I embrace modern convenience while honoring the essence of her traditional cooking. It's a perfect example of how food evolves with us, yet keeps us connected to our roots.

Yiayia’s Chips & Eggs

Serves 2

What you’ll need: ⁠

300g frozen potato chips

4 eggs, scrambled ⁠

Olive oil ⁠

Salt ⁠

Feta ⁠

Shallot or chives to garnish ⁠

What to do: ⁠

Cook the fries as per instructions ⁠

Heat a pan with a generous amount of olive oil over medium heat ⁠

Place your fries in and pour over the scrambled eggs ⁠

DO NOT touch it, wait till the eggs start to bubble then flip ⁠

Once cooked top with crumbled feta and garnish ⁠
