Roasted Capsicum & Feta Spread Burgers with Cleaver’s Organic Chuck and Brisket Patties

Serves: 4
Prep Time: 10 minutes
Cook Time: 15 minutes

For the Burgers:

4 Cleaver’s Organic Chuck and Brisket Burger patties

4 burger buns, halved

4 slices of smoked cheddar (optional)

1 cup mixed salad greens

1 red onion, thinly sliced

1 large tomato, sliced

For the Roasted Capsicum & Feta Spread:

2 red capsicums 

100g feta cheese

1 tbsp olive oil

1 tsp smoked paprika

1 clove garlic, minced

Salt and pepper to taste

For Assembly:

BBQ sauce

Pickles (optional, for extra tang)

Roast the Capsicum on the BBQ:

Preheat the BBQ to medium-high heat.

Place whole capsicums directly on the grill. Cook for 10-15 minutes, turning occasionally, until the skin is charred all over.

Transfer the capsicums to a bowl, cover with foil or a lid, and let them steam for 10 minutes.

Peel off the charred skin, remove seeds, and roughly chop the flesh.

Prepare the Capsicum & Feta Spread:

Using a BBQ-safe pan or foil packet, combine the roasted capsicum, crumbled feta, olive oil, smoked paprika, and minced garlic. Mash and mix with a fork until slightly chunky and well combined. Season with salt and pepper to taste, and set aside.
