The Secret to Perfect Chicken Katsu

The star of this dish is the chicken, and the secret to achieving that perfect crispiness lies in the panko crumb. Panko breadcrumbs are lighter and airier than regular breadcrumbs, which means they crisp up beautifully when fried. Here’s how you can nail that golden, crispy perfection:

  1. Bread Your Chicken Properly: Start by coating your chicken in a cornflour and egg white mix (till it resembles a glue form), and then coat it generously with katsu panko breadcrumbs.

  2. Cook to perfection: This recipe is a perfect for the air fryer, at 200 degrees they will be crisp and hot in about 20 minutes.

Building Your Bowl

Once your chicken is perfectly crispy, it's time to build your bowl. Here’s what you’ll need:

  • Rice: A bed of fluffy white rice serves as the base. You can use jasmine or sushi rice for the best results.

  • Cabbage: Thinly sliced cabbage adds a fresh, crunchy texture.

  • Pickled Vegetables: These add a tangy contrast to the richness of the chicken. You can use store-bought pickled veggies or make your own with my quick pickle recipe.

  • Spicy Mayo: Mix mayonnaise with a bit of sriracha or your favorite hot sauce to create a creamy, spicy drizzle that brings all the elements together.

Chicken Katsu Bowl

Serves 4

What you’ll need:

Chicken

4 chicken thighs

2 cups panko crumbs

1 pkt Mingle Butter Chicken or Japanese Curry

2 egg whites

1 Tbsp Corn flour

Assembly

Cooked rice, thinly sliced cabbage, pickled vegetables (red onion is my favourite), cucumber, tomtato & spicy mayo

What to do:

In a shallow bowl combine the cornflour and eggs whites, mix till a glue consistency forms.

On a dinner size plate, place the panko crumbs & the mingle seasoning - mix till combined.

Pat your chicken thigh with paper towel, then one by one coat in the egg mixture (allowing any excess to drain off) then coat in the panko crumb. Continue till all chicken is coated.

Cook your chicken in an air fryer at 200 degrees for 20 minutes or till cooked through.

To serve, place cooked rice on the base of your bowl, and layer with cabbage, pickled vegetables, cucumber & tomatoes. Place the sliced chicken on top and drizzle with spicy mayo.
