I'm so excited to share one of my absolute favourite recipes with you—my 15-minute foolproof chili chicken udon noodles. This dish holds a special place in my heart as it reminds me of my favourite noodle dish from a charming little dumpling place near my house. The chewy udon noodles, drenched in a thick and luscious sauce, perfectly capture the essence of comfort food.

What makes this recipe extra special are the crispy sliced cucumbers that add the perfect crunch and freshness, balancing out the spicy chili oil. And if you're not a fan of heat, no worries! You can easily omit the chili and still enjoy a flavourful, saucy chicken that clings to the noodles. It's a versatile dish that fits any taste preference and is guaranteed to become a go-to in your kitchen, just as it is in mine.

Chilli Chicken Udon Noodles

Serves 2-3

What you’ll need:

350g chicken mince
2 garlic cloves, minced
2 shallots, finely sliced
400g udon noodles, cooked

SAUCE
1 tbsp soy sauce
1 1/2 tbsp oyster sauce
1/2 tsp maple syrup
2 tsp dark soy sauce
2 tsp cornstarch
1/2 cup cold water

GARNISH
1 tsp sesame oil
1 tsp chilli oil
3 baby cucumbers, finely sliced

What to do:

Combine all the sauce ingredients in a small bowl - set aside,

Heat a medium deep pan over medium heat with a dash of extra virgin live oil. Add the chicken mince and sauté till cooked through.

Combine the minced garlic and white parts of the shallots. Sauté for 2-3 minutes.

Pour the sauce mixture over the chicken and reduce to a low simmer. Simmer slowly for 3-5 minutes till the sauce becomes thick and coats the back of the spoon.

Add the cooked udon noodles to a bowl and pour over the chicken mixture. Top with a grizzle of sesame oil, the remaining shallots and chilli oil.
