Greek Inspired Salmon Tray Bake

Serves 2

What you’ll need:

2 fillets of salmon

200g cherry tomatoes

60g Greek style feta

300g small potatoes, cut in half

1 small red onion, roughly chopped

Fresh dill

4 slices lemon

SAUCE
Juice 1/2 lemon

1/4 cup olive oil

1 tbsp dijon mustard

1 tbsp fresh dill, finely shopped

2 gloves garlic, minced

Salt & pepper


What to do:

Preheat oven to 190 degrees celcius

Combine all the sauce ingredients in a small bowl - set aside,

On an oven proof tray, place the cut potatoes & red onion. Drizzle over half the lemon sauce - toss till coated.

Cook for about 20 minutes till potatoes are roasted.

Make space between the potatoes for the salmon fillets and cherry tomatoes. Place the lemon slices on top of the salmon , drizzle the remaining sauce over the tray and crumble feta over the tray.

Cook for another 8-10 minutes till the salmon is perfectly cooked.

Garnish with some fresh dill & serve
